For Maggie's birthday that fell on a Sunday we had "fancy sandwiches"! There were all the fixings which made it challenging to make the perfect sandwich (you really only have one shot). We had such a good dinner we didn't save any room for dessert, so the angel food cake had to wait a day.

We were so into Chef Diaz and all his tips. And I probably had the stare-face, mouth-open look on the WHOLE time cause our classmates were unreal.
If you live in Utah, you should be go take a Harmon's cooking class immediately. So worth it, great food, and a wide variety of classes.

Pizza for Emily

Las Vegas
It was Emily's birthday and we wound up in Vegas cause St. George was too cold to lay out. We hit Grimaldi's at Fashion Show Mall for dinner. It was just as good as I remember from being in Brooklyn, NY with my sisters. >>> that means REALLY Good! It was the best place to take our number 1 pizza fan, Emily Hutch.

Egan recommended this restaurant to me and I thought Lezlie's birthday would be the perfect reason to give it a try. It was a first time for all of us. We loved the vibe of the restaurant, the food was super delicious, and we were impressed with everyone who worked there. I'd love to go back.
I got the Sweet Beets for an appetizer (mouth watering now. so good.)
and the
Squash Stack for my entree. (that tomato sauce. amen)
We went to the documentary called First Position about ballet, the training and tough competition. Very interesting. (and ouch)
Love Lezlie and love girlfriends.

roommate revival

Maggie has moved back to Utah and it's been too long since we've been back together as roommates (miss you Teen). We decided to make dinner and brave some sushi rolling at Kimberly's place. We tried My New Root's Quinoa Spring Sushi. And guess what?! It was easy and delicious!!
We had a nice big bowl of kiwi+mango+cantaloupe, a side of shrimp, and edamame to snack.
For dessert we had coconut ice cream. I'll stop there. bam.
We all agreed...sushi at home is possible and exciting!

Sugarhouse Park
We took advantage of spring and met at the park with salads in hand. It was the perfect way to celebrate our 12th time meeting as a cooking group.
Ellie made a delicious shrimp, mango, cucumber salad that I can't stop thinking about.
Brooke made and arugula, pecan, roasted beet, balsamic salad. And you can never go wrong with beets in my book.
I made a lemony lentil and bell pepper salad from Power Foods cookbook.
It was an ideal combo of salads.

kitchen magic-eleven
Not our kitchen, but the new City Creek Harmon's in downtown Salt Lake! It's so pretty! We got pretty giggly about it.
Ellie and I signed up for Finding the Right Balance Every Meal class. After 3 hours, a very good meal, and learning lots from a talented chef I thought it was well worth the time and money. I want to sign up for more....like Knife Skills, Fresh and Healthy Mexican, Spring Desserts, Sushi 101...
We were one short of our trifecta, missed you Brooke!

I was really wanting to make a Nothing Bundt Cake cake so I went to pinterest and found a recipe. (cheaper and more proud when you do it yourself).
The thing is, Heather doesn't like chocolate cake so I kinda had to improvise from this recipe.
This is what I did:
1 pkg. vanilla cake mix
1 pkg. instant vanilla pudding
1 c. sour cream
4 large eggs
1/2 c. water
1/2 c. oil
Mix first six ingredients together with a beater. Add chocolate chips. Pour into a greased bunt cake pan (cooking spray works best). Cook in oven at 350 degrees for 45-50 mins. Remove from oven. Let cool for 20 mins. Remove from pan. (I think it tastes best if you put it on a serving plate, wrap it well in Saran Wrap, and let it sit overnight in the fridge before frosting and serving..)

I used a different frosting recipe cause cream cheese isn't my favorite. I added half a packet of raspberry jello to get a pink color and a little flavor (thanks for the tip mom!)

Karaoke is never a disappointment and turns out we've been missing out cause Thursday nights rule pretty hard. Hardly anyone is there and those that are can sing pretty good. And then this happened:

Tri-angle this.
mix
3 1/2 cups Rice Krispy cereal
1 cup pretzel sticks broken up
1 cup almonds (or peanuts) chopped
melt
6 ounces of chocolate chips
combine melted chocolate and 1/3 cup peanut butter
pour over rice krispy mixture
melt 1/2 stick of butter and add 10 oz. mini marshmallows
add to mixture and press into dish (and probably add sprinkles)
refrigerate until ready to serve
cut into triangles
