What's better than Breakfast?

Nothing.
Obviously.
But Breakfast with the Sibs for sister Annie's bday is pretty top notch.
Original Pancake House and I get a long real well. I dabbled (did I say 'dabble' I meant 'DEVOURED') at the coconut waffle this morning.

I love my sister Annie. I'm a lucky girl to have her as a sister. She's this incredible friend and amazing wife and mother. I love living close to her. Happy Happiest Birthday Annie.

Watched "The Fall" with my sister Egan this weekend.
And it's all I can think about.
Don't watch the trailer, it'll ruin it.
The story is so entrancing.
It's incredibly visually stimulating.
I think I'll watch it again right now.

earth


I'll make this quick and painless.
I love the Earth.
I just couldn't let Earth Day go with out giving it a shout out. {Even though this holiday(?) is kinda hilarious}
My Northwest roots taught me to love trees and mountains and water. I rejoiced in living close to all three.
My Parents kept a beautiful yard and grew an abbundant garden and composted. I eventually found mowing the lawn and weeding enjoyable. And throughout summer I loved eating the rewards of our garden.
I moved to Idaho and quickly fell in love with the wide open spaces, the big sky, and the spectacular sunsets.
I now live in Utah and on a daily basis gawk and oooo and awe at the mountains so close. I love the manicured lawns surrounding my house and the hikes and bike rides that are moments away.
God is the creator, this I believe. No cloud in the sky, No glorious sunset, No garden so lush, No mountain so tall, No grass so green, No flowers so colorful, No sky so magnanimus can deny it. It's a remarkable and comforting thought. God is the creator of all things.

Last night I didn't feel like going to the store. One of those nights where I knew I had enough food in the house to make something...but what. I had to get creative. Since, I'm not a pro at making concoctions from my own noggin, I turned to the experts.

I searched Couscous in the search and *BAM* the perfect recipe appeared.
Couscous--Check
Curry Powder--Check
Apples--Check
Salt--Check
Pine nuts--Check
Water--Duh

I didn't have green onions...but what gives. I added Craisins instead. Not exactly a substitute, but I had craisins, and I like color in my food.

Give 'er a try!

Oh...and ummm...it took like 10 minutes. No Lies.

You and Me are meant to BE

Can you believe I'm dedicating such a post to none other than a lawn chair??
It's true.
The skies are blue and the sun is out.
Today I took advantage of the sunny weather by eating lunch in my backyard and talking to my cute little red head neighbor (4 years old), went on an extra long run with Teen, wore shorts, and thought sunny thoughts.
What are sunny thoughts? I'll tell you:
Sunny thoughts are when I think of all the things I want to do in the sun.
Like: kite flying, frisbee throwing, bike riding, BBQing, Picnicing, Tanning, Porch hanging on and on.
But one sunny thought that I am posting about right now is lawn chairs. A good lawn chair necessary. It's a need. Today I sat on the cement of my backyard patio. Not for long. I am in the market for a good lawn chair. One like these below. Full body, adjustable, and obviously comfortable.

stop me

I have to.
It's just too good.
Yesterday Kristine and I made Roasted Salmon with Lemon Relish.
Am I freaking you out with how gourmet I sound? I'm freaking myself out.
I found the recipe in a favorite book: Everyday Food: Great Food Fast I tell you...those pictures scream at me. They are so delicious looking.
You really need to try this salmon recipe. It was easy, healthy, quick, and beautiful.

We used craisins instead of raisins. I'm glad I did. And I have a pinenut fetish...weird.

On the side we made Cucumber-Radish Slaw. I really like cucumbers and radishes, so I said "why not?"! I'm glad I did. Fast, cheap, and easy. That's the name of the game around here.

I didn't dry out the vegetables as long as they said...who has 20 minutes? But it was fine.

Ok...no more food posts...at least for today!
It's Lunchtime.

Pinata Please

Egan; creative, hilarious, hot bod, sister-of-mine, decided we ought to make a pinata for Easter. 'Duh, I said, cause a pinata on Easter make so much sense." So away we went...I got as far as helping her put on the first layer of paste and newspaper and then she took care of the rest.




On Easter we assisted Egan in getting the little one's on to Pin the Tail on the Bunny.




Then onto a scavenger hunt!!!


Ending with surprise! A pinata!!!


I had to step in and help. Obviously.

Strawberry Muffins



I know. This isn't supposed to be a food blog. But I can't NOT post about these muffins. Easter Sunday I woke up and making muffins just felt right. The sky was BLUE, the sun was OUT...it felt good. I yanked all the shades open in the house, cranked open the window in our kitchen and baked away. It's another recipe from everybody likes sandwiches.

We neglected to top it with cinnamon & sugar. Still great muffins. Strawberrys and a hint of orange zest. All I want in a muffin.

weekend rundown


Teen blogged about our fantastic weekend. I couldn't let this Monday go without reporting on what a lovely weekend it was. With a great hook up from work I got to attend the Saturday morning session of my church's General Conference. I, along with Kristine and two other friends, sat on the floor of the Confernce center. If you've ever been inside of the Conference center then you understand what great seats those are. That place is ginormous.
I was spiritually uplifted, rejuvinated, and excited.
The weather was perfection! We took 2, count em 2, walks on Saturday. Lots of nature polaroids to show you.

I'm very easy to please...


I've already told you how much I love breakfast. It's one of the best things in life. That's why today when I purchased a waffle iron I gave it a hug and whispered little secret delights we would share this weekend.
