pumpkin face


I made these pancakes, because I finally purchased coconut flour. These pancakes are so surprising because with a few tablespoons here and a few there, it seems too watery, but you put them on a pan and wah-lah! beautiful pancakes are born.
The recipe suggests this strawberry banana topping, but I decided to use a pumpkin drink recipe as the topping instead.
October, I can't quit you.

smells like fall spirit


we are in full fall mode around here because:

+I'm definitely not too good for the pumpkin spice cookies. I've made them 2x.
+I've been humming harvest moon for 4 weeks now
+These socks remind me of my sister jen. i'd like my feet to meet them soon.
+I'd like to have a fall dinner party
+Phil (ahem), I mean modern family is ba-ack.
+on the hunt
+Egan and I made pumpkin granola in bulk. it's incredibly tasty.
+I'm 3 deep in knitting and crochet projects
+I'm off track

honey & spice


I've found some great cookbooks from thrift stores and garage sales that I've loved looking through. They are pretty old, and lack pictures, but I am drawn to how natural the recipes are.

I had a pile of overly ripe bananas and as luck would have it I found this bread recipe in my latest cookbook Honey & Spice.

Banana Fantasy Bread
1/2. cup oil
1/2. honey
2 eggs
2 cups whole wheat pastry flour
2 tsp. baking powder
1 tsp. coriander
1/2 tsp salt
1/2 tsp. baking soda
3 mashed ripe bananas

Cream the oil and honey, Beat in the eggs.
In another bowl mix the flours, baking powder, salt, and soda.
Add the dry ingredients to the wet and alternate with the mashed banana.
Bour into a greased loaf pan and bake for 1 hour at 350.

Maggie and I tried it this morning. It was deluxe.

Year 2 of teaching 1st grade is coming along nicely.
I love my students and I work at a great school.
We learn so much in 1st grade and I know I don't give these little guys enough credit for how much work and learning they do.
I'm a real lucky teacher.
