The other day my mom bought this cookbook at anthropologie called get cooking. It's by Mollie Katzen who also wrote Moosewood Cookbook. (which I got for Christmas-thank you Lindsey) We tagged the book up and started with this polenta recipe. Unbelievably easy and so delicious we couldn't get over it. Polenta is surprisingly versatile. I'm already brainstorming some ways to use it. (did someone say breakfast? cause i heard you) But really, I can't wait to try this recipe again. It's a stew consistency on top of a creamy corn textured base.
