1st grade is the best. i'm not even lying when i say that i got the best class. i really did. and guess what??? i'm not tired yet. Hoooray. Busy, sure. But not tired.

Chances Are
Cottage Cheese.
It has become a weekly necessity at the grocery store.
That, and eggs.
And Greek Plain Yogurt.
But cottage cheese, it's really all over the place these days.
First it was for dipping my corn chips.
Then it was to top my turkey burger.
Now to go inside my crepes.
Yes, crepes.
Another ditty discovered via Everyday Foods.
To Make:
Crepes:
Blend 4 eggs/ 1/4th tsp. salt/ 2 1/4 cups milk/ 2 cups flour (I do half whole wheat)/ 1/4 cup butter
Filling:
1 cup cottage cheese/ 1 tbsp. sugar/ 1 tsp. cinnamon (or so)
Fill crepes with filling and roll,
place on cookie sheet and bake at 350 for 5 minutes.
Meanwhile, toast sliced almonds
and
whisk over heat 2 tbsp. apricot jam and 2 tbsp. water
Once crepes are baked sprinkle with almonds and drizzle with apricot syrup.

This week in highlights:
Finishing 1st season of Mad Men...onto number 2! I wish I could sweeten my voice up like that hot red head.

Doing a dating panel at a boys ranch with my roommates. (or maybe it was when a 14 year old asked me to dance the Waltz with him. gush)

A few weeks ago Teen came home with a stack of Everyday Foods magazines from Thrift Town. Since then I've been flipping through them multiple times a day. The pictures are eye-catching and I dog tag multiple pages in each one.
I gave these Cottage Cheese Pancakes a try last week, and I've cooked them up a few times since.
I start school on Monday! Can you believe it? (don't tell anybody...but I'm not ready) I'll be a real life teacher. 22 little baby first graders. Can't wait to meet them.

foaming at the mouth
For 3 weeks now I've been on a lunatic search for a backpack (cause, you know---I despise purses and I just want a backpack)
Not just any backpack, though.
A simple one.
Canvas would be nice.
Neon orange would be spectacular.
Slightly used is preferred.
But to no avail.
The search goes on.
Then today,

This is it!!!
Must have.
I searched for 30 minutes today, trying to find a price and a location to purchase.
Out of stock again, and again.
I won't stop.
obsession just got taken to a whole new level.

Graceful in the Morning Light
Hiked Mount Timpanogas on Saturday.
This is the run down:
5:35 wake up
5:45 eat new favorite breakfast obsession {Ezekiel toast with PB and frosted flakes with fresh strawberries}
5:55 boys pick us up
7:15 arrive at parking lot and manage to make up a parking space in the over populated trail head
7:30 hike on
11:30ish reach top, realize we did not pack well (1 water bottle?? and a baggy of trail mix???--What were we thinking) Good thing our co-hikers were champs and had triscuts, pretzels, m&ms, turkey jerky galore!
3:15ish back at trail head tired, dirty, and sore
It was a gorgeous hike, the view wasn't even the impressive part. I had to remind myself to stop and look around while hiking because the mountains were spectacular. Lush green wildlife, blooming flowers, river beds, snow, and rocks.
Summer 2009 has thus proved to be full of outdoor adventure. Here, Here!
