something good to eat


My Mom sent me this from a Relief Society activity.
It was good for lunch the next day and super good over quinoa.

Bean, Cabbage and Feta Salad

1 can kidney beans, rinse and drain

3 cups cabbage, finely chopped

1 red bell pepper, chopped

1/2 cup feta cheese, cubed (fat free crumbles)

3 tbsp fresh parsley

fresh basil


Dressing

2 tbsp lemon juice

1 tbsp flaxseed oil

2 cloves garlic, minced
