We made him a book about our wildest dreams. And gave him something to remember Salt Lake City (salt water taffy). He gave every student a book. Autographed. Was on his way. It was....Awesome!!!!

willard, willard, he's our man...




willard-the dark horse, took our pictures on Saturday. Twin pictures were in order since Kristine is abandoning me for California. (Is this really happening?)
We went to Red Butte and walked around the gardens. They were really worth the monies ($6), but we were all more drawn to the natural foliage off the beaten path.

on a side-note: I love willard. and I love summer 08 (and everyone who was apart of summer 08).

perfect time for some party pieces














my roommate, kimberly, had a birthday this week.
we celebrated with lots of treats at our house.
it was an ideal time to finish off the role of film in my disposable camera that has been bouncing around my purse and screaming to get out.
i love kimberly+treats+film. Yay for a great week!

5. wear fancy shoes
6. go on adventures

to sum it up: "go on adventures and boys will think you're cute"



I like them all, except fancy clothes and fancy shoes. naaaah.

I love rhubarb and my mom has plenty in her garden that were ready to use, so I decided to try these muffins. I didn't like the calorie count---210 for one muffin---and knowing how I'd want to eat more like 2 or 3 I decided to alter the recipe for a healthier outcome. Here's what I did.

1 cup all-purpose flour
2 cups whole-wheat flour
2 tsp baking powder
2 teaspoons ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
2 eggs (instead of 2 eggs I used 6 tablespoons boiling water with 2 tablespoons ground flaxseed--let sit for 15 minutes then fluff with fork)
1 1/3 cups packed brown sugar (instead of brown sugar I used 1 cup dates and 1 cup hot water blended to a paste)
1 1/2 cups applesauce
1/4 canola oil
2 cups rhubarb, cut into 1/4 inch pieces

preheat oven to 400F
combine flours, baking powder, cinnamon, baking soda, and salt---make a well in the center

beat eggs (or flaxseed/water mixture). stir in brown sugar (or date/water paste), applesauce and canola oil.

pour egg mixture into the well in flour mixture. stir until batter is combined but still slightly lumpy.

fold in rhubarb.

grease a standard muffin tin or line with paper or silicon liners. fill with 2 tbsp. batter. I sprinkled mine with a little cinnamon-sugar.

bake 15 minutes.

makes 18 muffins.

last night maggie and I saw the new Banksy film: Exit Through The Gift Shop at this fantastic theater on Capitol Hill here in Seattle. I had heard about this film from friends who saw it during Sundance. I've been eager to go since. Luckily I am in Seattle where they are showing it. It's fascinating. I want to see it again. I love seeing the street art of Space Invader, Shepard Fairey, and Banksy. Now... Thierry Guetta....he is an unusual and endlessly fascinating guy---the documentary turns out to be more about him then anyone else.

bullet points

I'm really excited about sprouting. I've been wanting to do my own sprouting for a month or so now and my mom gave me some sprouting lids and a wide mouthed bottle. We experimented with some and they are wonderful, nutritious, and easy. This picture is day 2 of the process. They are just beginning to sprout open.

Lunch can sometimes be my least favorite meal of the day---but never when it's made by my mom. See the sprouts on top? They were so perfect and tasty.

My Mom and I played tennis this morning. She's patient with a learner like me. I'm eager to play with anyone who wants to this summer. Let's plaaaaay!

Dallas Clayton is going to come and read to my class!!!! I'm so excited. He's going on tour and I emailed him inviting him to meet my awesome first graders and read to them. He said he would! May 27th. Count down. Hopefully it's not uncomfortable between us---I mean I did ask him to be my valentine on the www.
Would you like to aid in children's literacy? You should buy his book! For every book bought he gives one away. It really is an awesome book.

I'm having veggie chili tonight with my folks, perfect after a rainy rainy Seattle day.

And dearest Margaret Augusta, I can't wait to gallivant all over Seattle with you tomorrow.

Interesting stuff. I got them on the brain.
also---i just discovered the documentary feature of hulu two weeks ago. why has no one told me about this?? Just what I need. I've been wanting to watch Ghandi again. After that Rock Fresh , then Astronaut Down... okay I gotta stop

hairy stuff


the first thing I did when I got off the Light Rail last Monday and into downtown Seattle was walk into Lush. I hadn't been into a Lush store since my Europe trip and I was on a mission.
Solid Shampoo and Conditioner.
I set aside my roll-on suitcase and asked the worker about the particular product. I'll give her props for being an excellent saleswomen. I bought it, I've used it, and I love it. 50 washes or 3 bottles per bar of soap! Amazing huh! And the conditioner---it can be a wash, leave-in, or a pomade. Neat!
The eco-friendly part is what gets me---no big plastic bottles going to waste.
Here's to hoping they get a Lush in Utah.

On the Menu:
Spring Rolls with Rice Balls

Spring Rolls are filled with:
spinach
carrots
sweet potato
toasted sesame seeds
red pepper
cilantro
basil
ginger

Peanut Sauce:
homemade almond butter
agave
tamari

Rice Balls (pure genius by the way):
pressure cooked brown rice and sweet brown rice
rolled in toasted sesame seeds and sea salt

I resisted posting about food again, but I can't help it. Do you hate it?
